What you need:
- 1.5 lbs countrystyle pork ribs (or whichever cut you prefer... the fatty cuts will roast better and stay more moist)
- About 6 medium sized redskin potatoes, quartered
- 2 cups baby carrots
- 1 sweet vidalia onion, diced in large pieces
- 1 medium apple, peeled and diced in large pieces
- Olive Oil
- Salt, Pepper to taste
- Garlic powder or fresh garlic
- 1 cup beef broth (I used instant, but whichever you prefer)
- 2 tbs dried Italien herb seasoning
- Fresh Italian basil
- Preheat oven to 350ºF
- Heat olive oil in skillet. Season pork ribs with salt, pepper and garlic powder and sear until browned.
- Add carrots, potatoes, apples and onions in a large baking dish, pour about 1 tbs olive oil on top and season with about 1 tbs of the dry Italian herb seasoning and toss well.
- Add 1 cup of beef broth.
- Lay browned pork ribs on top, sprinkle with remaining Italian herb seasoning.
- Cover with aluminum foil and bake in the oven for about 1.5 hours.
- Remove foil and bake for another 30 - 45 minutes, until liquid is more concentrated and vegetables are nicely browned.
I know this picture isn't the best since I took it at 2am when I took the roast out of the oven! But I hope it shows how nicely moist the roast came out, and how nicely roasted all the root veggies are!
